Celebrity chef supports Bun in the Oven!

Celebrity Chef Dean Edwards who appears regularly on the 'Lorraine' TV show is helping launch the Bun in the Oven week at Southmead hospital,

Dean who was born at Southmead has donated his favourite cake recipe to help inspire others to get baking for the Mums the Word appeal which is raising funds for the Maternity Unit at Southmead. The ‘Bun in the Oven’ event runs from Monday 28th of March to Friday 1st April 2011.
 
Dean said, "I was born in Southmead hospital many years ago so I'm glad I can help. Good luck with your cause." 
 
Dean Edwards Lemon drizzle cake:
 
110g unsalted butter softened
100g caster sugar
140g self raising flour
2 free range organic eggs beaten
1 lemon rind grated
2 tbs lemon curd
 
drizzle:
juice 2 lemon
2 tbs caster sugar
 
Method:
Cream butter and sugar, add lemon rind, eggs then fold in sifted flour, mix until fully combined, then fold through the curd.
Pour into a greased 1kg baking tin. Bake in a pre-heated oven set at 180c for approx 1 hour.
Meanwhile mix lemon juice and sugar and pour over cake as soon as it comes out of the oven. Leave to cool.
